2011 Limited Release Harvest

The aroma of this harvest contains a mix of both green and ripe olive fruit characteristics described as nutty, grass, pine, floral, and buttery with a slight amount of artichoke. It’s pleasantly smooth and rustic up front with a pepper finish moments after you swallow. It's considered medium on the mild to robust scale. This oil complements onion, citrus, and garlic flavors exquisitely. Great to drizzle over salads, steamed vegetables, seafood, poultry, stir-fry, pasta, potatoes, and sandwiches. Greek Balsamiko with Fresh Garlic	Ingredients: Dáfni Unfiltered Extra Virgin Olive Oil, Balsamic Vinegar (aged ten years from Modena, Italy), Fresh Maine Grown Garlic, and Dáfni Wild Greek Oregano. SODIUM FREE. Drizzle over salads, steamed vegetables, steak, beef, grilled chicken, salmon steak, stir fry and fusion cuisine, mozzarella and tomatoes, and bruschetta. Fabulous for marinades and bread dipping. Use it to make garlic bread or for your tuna salad, chicken salad, pasta salad, and potato salad instead of a mayo base!
Greek Lemóni	Ingredients: Dáfni Unfiltered Extra Virgin Olive Oil, Organic Lemon Juice, Dáfni Wild Greek Oregano, Sea Salt from the Pacific. We offer both Kalamata and Cracked Green Olives. These olives are all handpicked and shipped to Maine
where we cure them in our low-sodium family brine recipe with Dáfni™ Olive Oil.

Cracked Green Olives

These olives are the Amfissa variety and are grown in Delphi, Greece. They are handpicked in October and the cracking of the olives is an ancient recipe. They are made in our fresh lemon juice brine containing only 170 mg of sodium. They are crunchy, medium in size and have slightly sweet and bitter flavors. Excellent for dirty martinis, salads and green tapenades. Add them to beef or pork stew, or serve as a simple hors d’ oeuvre seasoned with lemon wedges, garlic, hot pepper flakes and fresh coriander.

Kalamata Olives

Our olives are made in a gluten-free apple cider vinegar brine and contain only 190 mg of salt. They are marvelous on pizza, in salads, omelets, sandwiches, or as an addition to grilled vegetables- especially zucchini and sweet peppers. They are perfect for breads and pâtés and are natural partners with a variety of tomato dishes, both cooked and fresh.

Bay leaves are a crucial part of Greek cuisine and are used in cooking for their distinctive fragrance and flavor. They are commonly used in fish dishes, meats, vegetables, soups, stews, marinades, sauces and even custards.

Dáfni Wild Greek Oregano

Wild Greek Oregano is a robust and distinctive herb used in sauces and marinades since ancient times. Its leaves contain more oil glands than ordinary oregano giving it the potent and pungent flavor of the Mediterranean.

Dáfni Wild Greek Mountain Tea

The tea is hand-picked from Mt. Taygetos in Lakonía, and has been a secret to good health and well-being for centuries amongst our ancestors. It is 100% organic and has a sweet, floral and earthy taste with an aroma that is unforgettable.

Dáfni Wild Greek Thyme

Our Wild Greek Thyme is handpicked from Mt. Taygetos in the Lakonía, Greece region. Its essential oil content is higher than cultivated thyme, giving food a nice distinct flavor as well as increased health benefits. It is used for medicinal purposes as well as enhancing the flavor of many foods such as olive oil, pickled olives, butter, vinegar, meats, poultry, fish, soups and stews, and vegetable dishes.

Dáfni Wild Sage Tea (Faskomilo)

Faskomilo is used to make traditional Greek Sage Tea and is considered a “cure all” in Greece. Sage is a dependable source of antioxidants and is used to treat a number of illnesses, such as respiratory infections, sore throats, colds, inflamed gums, upset stomachs and headaches amongst many others. This soothing medicinal tea has bitter undertones and a special aroma that is very distinct and different from common tea. Great with honey and lemon juice.

Herbal Tea

This imported tea was considered by Ancient Greeks to have great medicinal powers. Chamomile is still appreciated today for its soothing nature. Krinos Chamomile is of the finest quality, hand-picked from mountain flowers. When brewed, it yields a light and aromatic herbal tea.
